Does a gfci protect other outlets?

Yes, that's correct. The outlets that are connected via the 'Load' connections will not be protected by the GFCI outlet. If there is no GFCI, anything that is spliced before it will behave as if there is one. The most important thing to do is to connect the GFCI to the panel via the 'Line' connections.
