Don't remove the packaging to thaw lamb in cold water. If you put the package into a leakproof bag, it will be airtight. The lamb needs to be submerged in cold water for 30 minutes to thaw. A 3- to 4-pound roast may take 2 to 3 hours to cook, while small packages of lamb can be frozen in an hour or less.
