How does a bulb thermostat work?

In response to temperature changes, Bulb and Capillary style thermostats use expanding liquid to open and close contacts. Is this true? The tube is mounted in the material flow and is known as the bulb. The fluid is carried away from the bulb to the head by a capillary.
