What is the difference between evaporative cooling and air conditioning?

AC uses chemicals to suck heat out of the air, butvaporative cooling doesn't. A swamp cooler uses water and a fan to keep it cool. Is this true? Evaporative coolers add humidity to the air and don't remove it.
