What is the purpose of a defrost thermostat?

When the temperature in the freezer compartment goes above a preset temperature of 40F (5C), a defrost thermostat opens the heating circuit to prevent excessive heating. Is this true? Without heating the contents of the freezer, this allows them to be heated for a short period of time.
